3 Easy Meal Prep Ideas!

Meal prepping can be difficult if you don't have a clue about what you want make! You want something that is going to taste good but also not be so time consuming. When it comes to planning your meals for the week, remember it does not have to take you hours slaving away over a hot oven. I know the prep work can be a little time consuming but with practice, you'll be able to get it down quickly. Here are a list of 3 different meals we like to cook that don't require too much of our time, as well as makes quite a but so you don't have to worry about lunch, and maybe even dinner!

 

 

Lean Meat Chili

Once you get the prepping of the vegetable down, all you really have to do is have it simmer in the pot! This recipe makes quite a bit but it definitely is a crowd pleaser. Add a dash of hot sauce or some sliced avocado and you are all good to go.

  1. 5lbs ground meat (Ground beef, ground turkey, or ground chicken)

  2. 2 larges can if diced tomatoes

  3. 1 can of tri colored beans

  4. 2 cans of black lentils

  5. 3 bell peppers (diced)

  6. 1 large onion (diced)

  7. Cumin

  8. Chili Powder

  9. Garlic Powder

  10. Salt/Pepper to taste

 

Mixed Berry Salad with Shredded Chicken 

I love this salad any time of the year. I love the taste of berries with the cheese and chicken. Just toss it all together and boom! Done! Its really easy to put together. Most grocery stores have pre cooked chicken breasts/rotisserie chickens ready for purchase so you can just take it home to shred it, chopped the berried and toss it in some greens. What's also nice about this salad is that you can switch up the berries and dressing. I favor the poppy seed dressing but you can definitely do a balsamic vinaigrette. You can also stick to only 1 type of berry or add a mix! 

  1. 1 whole rotisserie chicken or 3 large chicken breasts, (shredded)

  2. Container of mixed greens or chopped romaine

  3. 1 package of raspberries

  4. 1 package of strawberries

  5. 1 package of blueberries

  6. Sliced almonds/candied walnuts (optional)

  7. Crumbled goat or bleu cheese (optional

  8. Choice of dressing

 

Sheet Pan Lunch

This is a meal that you'll see on the internet all the time. All you really need is a large baking pan/cookie tray and some parchment paper. In this recipe, I like using chicken breasts, brussels sprouts and sweet potato. I like to get some pre made spice rubs to put on my chicken. That way it has some flavor to it. Drizzle the  chopped veggies with olive oil, salt and pepper then put all in your pre heated oven at 350 degrees for about 15-20 mins. Once its all cooked and cooled, you're ready to divide it all up amongst your lunch containers and you are done!

  1. 4 large chicken breast sliced in half

  2. 2 large sweet potatoes diced

  3. 1 bag of brussels sprouts sliced into halves

  4. Salt/Pepper to tastes

  5. Olive Oil

  6. Spice rub for chicken (optional)
